Thursday Already?

Had to show off my produce box from Saturday. We just switched to the small box -- the big box is about twice as much and it was impossible for us to use it all. Anyway, isn't it pretty?

Tragedy struck last night though when I forgot about the asparagus grilling-in-a-tin-foil-packet and all of those lovely spears got steamed to a mushy mess. I was so sad. :(

I need to find something to do with more red cabbage. Anyone have any suggestions?

And in other news, there are give-aways going on at Hey Lucy all this week (it's not too late to enter for the ones from Mon and Tues) in celebration of her birthday. Go check it out! Lots of good stuff.

Oh my goodness, that all looks so incredibly good. And I'm very sorry for you about the asparagus...that was what I noticed first. I hope you enjoy the rest of your spoils!

How sad! We used ours in some yummy veggie enchiladas last night. I was able to use up all the asparagus, a carrot and all my chard in one dish! Woohoo!

I was in quite the veggie rut before Abundant Harvest came along.

I don't have any ideas for the cabbage though. I did make some cole slaw with it, but then I was like, "Why did I make this? I don't even like cole slaw?" Oh well.

The only thing that I know to do with red cabbage is hollow out the middle and put veggie dip inside for all of your other vegetables. :) It looks really pretty, you have to cut a little on the bottom so it won't tip over...

i steam red cabbage and eat it plain. it's really healthy. i'll bet there's a million more delicious ways to eat it though!

where are you getting your produce and how can i do it too? that sounds so awesome!

ps we are pathetically ill still and now seth has rsv which means we aren't allowed out of the house for at least seven days. it may be awhile before we get together. blah.

What a beautiful picture those veggies make!
There are lots of recipes for red cabbage on allrecipes.com - I'd love to hear what you come up with to try!

That is SO sad about the asparagus.

Google searches of the Peoria area have turned up no services similar to this one. Fortunately, houses are cheap and I have seeds. Effing Peoria.

My mom makes a danish dish with red cabbage that we have for Christmas and any big meal, really. If you want the recipe I'll send it over. It's good if you're having roast, potatoes, gravy, that kind of thing. At least that's what we always ate it with!

ahhhh, that IS a beautiful sight! I can't wait to start getting our bounty of fresh farm produce. Why have I not signed up yet?!

Wish I had a cabbage recipe to share...I just steam it too, I added baby potatoes and some onion once, sauted it all together and even the kids loved it. (I let the cabbage sit with a little salt on it for about an hour first, to get the juices flowing...) It was healthy and yummy. If you find something delish, pass it on!

Ok...I had this salad once at a little cafe and it was called the tri-salad. It was shredded carrots, shredded red cabbage, and shredded green cabbage. Then they added sunflower seeds and currants with a creamy poppyseed dressing.

Sound weird? it's really tasty!
